By the time she was 10, Nikki Cox had already started appearing in some minor acting roles. In 1988, she landed the role of a dancer in the film Mac and Me although her role was not credited. Later in the same year, she appeared again as a dancer in Moonwalker. In 1991, she got a small role in Terminator 2: Judgment Day before waiting till 1996 before getting the role of Millie in the film The Glimmer Man.

The subsequent films she appeared in are Sub Down (1997), Nutty Professor II: The Klumps (2000), Don’s Plum (2001), Run Ronnie Run (2002), and Lonely Street (2009).

Where she became more famous is as a TV actress with many important portrayals. She was in an episode of Mama’s Family in 1987 and then in 1989, she was in the TV film The Ryan White Story as well as in an episode of Star Trek: The Next Generation. A Family for Joe and Night Court was the TV production that she was part of in 1990.

In the years that followed, she got some smaller roles until 1995 when she got the role of Tiffany Malloy in Unhappily Ever After. In 1999, the same year that Unhappily Ever After ended, she got the role of Taylor Clayton in The Norm Show. From 2000 to 2002, she played Nikki in Nikkin White, and then from 2003 to 2007, she was Mary Connel in Las Vegas. In 2006, Cox was in The Jake Effect.
